Thakali vengaya patchadi Heat oil in a pan. Add the cloves, cardamom and cinnamon. As the spices splutter, add the finely cut onions and chili (split lengthwise) into the vessel. After 2 minutes add the finely cut tomatoes into the pan. Now add the ginger-garlic paste and salt to the contents. Close the pan with a lid and let the contents cook on a low heat

Dosai When you see it brown on the back, turn it over and pour a little bit of oil again on this side. Take it out when it it is golden brown. You can also make soft dosa by not spreading it thin in circular motion, and not frying to a golden brown. Dosas can be eaten with many side dishes and dips. veg curry or sugar and ghee, idli mix with gingley oil and chutney.
Idli Podi is not palatable on its own without any side. It requires, the very nature of idli dictates in fact to have something very spicy to dip into and eat. There is where idli powder or ‘podi’ as it is affectionately called. Podi is mixed in gingely oil and made into a mixture to dip into. This is a very special tast and only certain people can enjoy it.
Malli vangayam. Add the onion, asafoetida, tamarind, red chillies, mustard and salt and fry well till the mustard seeds pop for a few minutes. Cool and keep aside. Put the dal and onion mixture and the cilantro into a blender. Add 1/4 cup of water and grind to a coarse paste. Now pour the seasoning over the chutney. Mix well. Refrigerate and use as required.
