Cook a Delicious Tamil Mushroom Fry

Indian Mushroom Fry Recipe - Time 15-20 minutes - Serves 4
Among Tamil recipes mushrooms(Kaazhan) are easy to cook. There are different kinds. The most common is the button mushroom. It has a soft meaty texture.
Cut them sideways with the stem. Don't cut too thinly as you will lose its texture. Normally each button can be cut into 3 or 4 medium pieces.

| Red big Onions |
3 medium size- sliced |
| Chili powder |
1/2 tsp |
| Turmeric powder |

| Ginger and Garlic paste |

| Fennel powder |
2 tbsp |
| Oil |
2 tbsp |
| Salt |
1 tbsp or to taste |

STEP BY STEP METHOD

Cut the mushrooms sideways with the stems and wash them well in water. Drain the water and add chili powder, turmeric and salt. Let it marinate for about 30 minutes |

Pour oil in a large frying pan. Add fennel powder and fry till it browns (about half a minute in high heat) |

Add the onions and fry them together(about one minute) |

Add the ginger and garlic paste and fry together in medium heat for about one minute |

Add the mushrooms now, mix them well and cover with a lid, cook for about 3 minutes. Do not add more water. There will be some water from the marinate, and that is enough. But if you want wet gravy add 1/2 cup of water. Check to see the mushroom is cooked but not over cooked (should not break when you press it).

After about 3 minutes remove the lid and reduce to low heat. Fry for another 3-5 minutes depending upon the texture you like. For soft and tender leave it for 5 or even 6 minutes. But if you like to chew and enjoy the meaty texture take it out in 3 minutes.
