Poriyal is a South Indian - Tamil dish, common in both Tamil Nadu and South India. Poriyal is usually made by shallow frying shredded or diced vegetables along with "masala" usually Urad dal, Mustard Seeds, Turmeric and Dried Red Chillis, i.e., Poriyals are usually eaten as side-dishes to a regular meal, usually Rice and Sambar.
Dry poriyal may be served as starters of main dish. Generaly poriyal with gravies are served with Indian breads (naans,rotis) or rice.Poriyal in dry state are served as side dish for lunch/dinner meal. They are served along with any meals satisfying the taste buds.
All Poriyals by default have some vegetables and lentils, but many variations of the main vegetable exist:
