Cut the mushrooms sideways with the stems and wash them well in water |

Pour oil in a large frying pan. Add urid dal, red chilis(broken) and mustard seed. Fry till urid dal becomes brown and mustard seeds pop |

Add chili powder, cumin powder, turmeric and coriander powder and fry well into a paste. |

Add the onion (sliced) and fry together in medium heat. After about one minute add 3 cups of water and let it boil for 3-4 minutes. |

Add the mushrooms now and cover with a lid for about 2 minutes. Check to see the mushroom is soft. Turn the heat to low and let it simmer for about 3(chewy and tasty) to 5 minutes(soft and tender). Turn off the heat and serve it hot |
