Buy fresh whole Coconut, break it into two and scrape out all the Coconut flakes and grind it in the blender with 1 cup of water |

Take out as much milk as you can by straining it and throw away the pulp. It should be at least 3 cups of Coconut milk. Keep it aside | | 3 |
On the stove place the big pressure cooker and add ghee and oil. Season the cinnamon cloves and cardamom. Add the 3 cups of coconut milk and green chillies with salt. Add Rice and 3 cups water |

Mix well and close the cooker and cook on high without the weight. Once the steams comes cook for 5mts and then reduce the heat to low and let it cook for another 6 mts then switch off

Once it cools down open the lid add ½ a bunch of cilantro and mix really well. This rice dish goes well with chicken curry |
