I can give some general guidelines about types of rice. How ever, each family is used to eating certain rice types for certain preparations. For example, in Madurai my husband's family prefer 'biryani rice' to basmati for biryani.

For every day some use raw 'patchai arisi' but the vast majority of Tamil folks use boiled 'puzhungal arisi'. So I am going to leave it to you to choose what you are used or prefer.

Cooker rice , pongina rice , vadicha rice. Vadicha rice (boiled and drained) by far is more healthy with less carbs but may be less in nutrient value. There are so many opinions that you need to do personal research in wikepedia for your needs.
