The traditional idli is a small, round patty of batter made of rice and lentils (specifically black lentil) and steamed. The 2"-3" diameter idli is usually served in pairs with chutney, sambar, or other condiments such as dry, crushed spice mixtures.

Rice (Boiled/Idli rice) 4 cups
Urad Dhall(Indian black lentil) 1 and 1/2 cup
Salt 2 tsp
Indian idli
STEP BY STEP METHOD

Method
1 Wash the rice and urad dal in water
2 Rinse and soak rice and urad dhall seperately in water for 4 hours
3 Grind the rice first
4 Grind the urad dhall next
5 Take a large bowl and mix them together. Add salt
6 Let it ferment over night. Check to see if it well fermented and raise to the brim
7 Pour it in special idli trays and steam in a cooker for 3 mts. Serve hot
8 Idlis can be eaten with many side dishes and dips. Traditional sambar and chutney or any non-veg curry or sugar and ghee, idli mix with gingley oil.
